- 1 lb. Italian turkey sausage
- 6 eggs
- 1 cup onion, diced
- 1 clove garlic, minced
- 8 oz. frozen or fresh spinach
- 1 cup fresh cremini mushrooms, sliced
- 2 tbsps. fresh basil, chopped
- ½ tsp. salt
- ¼ tsp. pepper
- 3 oz. goat cheese, crumbled
- ½ cup milk
- Olive oil
- Chopped scallions (garnish)
Preheat oven to 400 F. In a large skillet over medium heat, drizzle olive oil, and once heated, sauté onions and sausage. Cook until onions are caramelized. Then, add the garlic, and continue stirring until sausage is brown and garlic is fragrant.
Add the spinach, basil, and mushroom. Season with a pinch of salt and pepper. Once vegetables are heated, remove from heat. Pour the sausage mixture in a greased baking dish.
Meanwhile, whisk together the eggs and milk in a bowl. Pour the egg mixture over the sausage and vegetables. Then, top with the goat cheese.
Bake for 20 minute until eggs are fluffy and cheese is bubbly and melted. Serve with scallions on top as garnish. Enjoy!
