  • 1 cup whipping cream
  • 1 cup Mascarpone cheese
  • 2-3 tbsps. white sugar
  • 1 tsp. vanilla extract
  • 1 tbsp. rum
  • 2 1/2 cups strong coffee, room temperature
  • 2 3-oz ladyfingers
  • 1 tbsp. cocoa powder


Step 1

In a large bowl, whip together the cream, sugar and vanilla. Then, add the Mascarpone cheese and rum, and fold into the whipped cream.

Step 2

In a shallow dish, pour over the coffee. Dip each ladyfinger in coffee, and transfer to a 7 x 11 rectangular dish, enough to ladyfingers to cover the bottom of the dish. Then, spread with some of the cream mixture to cover the ladyfingers. Then, add another layer of ladyfingers dipped in coffee, and repeat spreading the cream mixture.

Step 3

Once the final layer of cream mixture is placed, dust with some cocoa powder. Refrigerate for 4 hours until set. Enjoy!
