- 8 oz. spaghetti
- 2 large eggs
- ½ cup freshly grated Parmesan
- 4 slices bacon, diced
- 4 cloves garlic, minced
- 2 tbsps. chopped fresh parsley leaves
- Olive oil
- Salt and pepper
In a large pot of boiling water, drizzle a little oil, and add some salt. Then, cook spaghetti as directed by the package. Before draining, reserve ½ cup of pasta water. After which, drain well.
Whisk together the eggs and parmesan cheese in a small bowl. Meanwhile, cook the bacon in a large skillet over medium heat, for 7 minutes or until bacon is crispy and golden brown. Remove excess fat.
Stir in the garlic, and sauté just until garlic is fragrant. Then, quickly add the pasta and egg mixture, and toss to combine. Season with salt and pepper. At this point, you may add a little of the reserved pasta water by time to time, until desired consistency is achieved.
Serve the pasta with a sprinkle of parmesan cheese, and chopped parsley leaves. Enjoy!
