- 4 lb boneless pork shoulder, trimmed of fat
- 6 cloves garlic, minced
- 2 tsp cumin
- 2 tsp dried oregano
- ½ cup fresh lime juice
- ½ cup fresh orange juice
- 12 slices Swiss or cheddar cheese
- 24 slider buns
- 12 strips of bacon, fried.
- 2 400 g bottles of pickle slices
- 12 tsp mustard
- Olive oil
In a slow cooker, drizzle some olive oil in a pot. Then, add the pork. Over the pork, add the garlic, cumin, oregano, lime juice, and orange juice.
Cover the pot and cook for 4 to 5 hours until pork is tender and and almost falling apart. Transfer the pork on a cutting board, and tear it into strands. For the sauce in the pot, fat may be skimmed, and set aside.
Lay out the bottom buns in a tray. Laddle some pork on each bun, then top with bacon, pickles, mustard, the reserves sauce, and cheese on top. Broil in an oven for 5 minutes or until cheese is melted. Serve with the rest of the top buns. Enjoy!
