Simple Salsa Verde

Ingredients
- 2 cups of flat-leaf parsley leaves
- 4 cloves garlic, minced
- 2 tbsps. capers in brine, rinsed
- 7 anchovy fillets
- 1 tbsp. of lemon juice
- ½ cup extra virgin olive oil
- Salt and pepper to taste.
Method
Step 1
In a blender, combine the parsley, garlic, capers, anchovies, lemon juice, and olive oil. Blend until the texture of the sauce is smooth.
Step 2
Taste, and season with salt and pepper if needed. Use salsa verde to dress seared fish or chicken. Enjoy!
