Romaine and Goat Cheese Salad with Lemon Vinaigrette

Ingredients

  • 5 cups chopped romaine lettuce
  • 1 small red onion, thinly sliced
  • 1 English cucumber, thinly sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup sliced olives
  • ¼ cup goat cheese, crumbled
  • Salt and pepper
  • For the Lemon Vinaigrette:
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tsp lemon zest
  • 3 tbsps. freshly squeezed lemon juice
  • 1 ½ tablespoons sugar

Method

Step 1

To make the lemon vinaigrette, combine together the olive oil, apple cider vinegar, lemon zest, lemon juice, and sugar in a small bowl. Whisk these ingredients, set aside.

Step 2

Meanwhile, add the romaine lettuce in a large bowl, and top with the red onion, cucumber, tomatoes, olives, goat cheese, salt, and pepper. Drizzle the dressing on top of the salad and gently toss to combine. Enjoy!
