Philly Cheesesteak Stuffed Peppers

  • 1 ½ lb. thinly sliced roast beef, sliced into strips
  • 8 slices provolone cheese (or mozzarella)
  • 2 large green bell peppers
  • 1 medium onion, chopped
  • 1 tbsp. garlic, minced
  • 1 6-oz. package mushrooms, sliced
  • 2 tbsps. butter
  • Olive oil
  • Salt and pepper


Step 1

Preheat the oven to 400 F. Meanwhile, cut each bell pepper into half. Remove the seeds and membrane.

Step 2

In a large skillet over medium heat, drizzle some olive oil. Then, add the butter, onions, mushrooms, salt, and pepper. Sauté for 5 minutes until onions and mushrooms have caramelized. Then, add the garlic, and cook until fragrant. Add the beef strips into onion mixture, and stir until each strip is coated.

Step 3

Add a slice of cheese in the bottom of a pepper. Then, fill it with the beef mixture. Add another slice of cheese on top.

Step 4

Bake for 15-20 minutes or until cheese has melted and lightly browned. Enjoy!
