Mushroom and artichoke frittata

Ingredients
- 5 eggs, beaten
- 5 eggs, beaten 2 fresh artichoke hearts, sliced thinly
- 2 ½ oz. mushrooms
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/3 cup parmesan cheese
- Olive oil
- Salt and pepper to taste
Method
Step 1
Preheat the oven to 350 F In an ovenproof skillet, sauté the onions, garlic, and mushrooms. Cook for 4-5 minutes until the garlic is light brown, and onions are translucent. Then, add the artichokes, and stir for 3 minutes or until they are golden brown.
Step 2
Pour over the beaten eggs. Then, sprinkle with parmesan cheese. Season with salt and pepper. Let it cook for 3-4 minutes.
Step 3
Then, bake for around 5 minutes until the egg sets, and can remove itself from the pan when shaken. Take the pan from the oven, and let the frittata cool. Serve. Enjoy!
