- 6 eggs
- 1 yellow onion, chopped
- 1/2 cup tomatoes, diced
- ½ cup baby spinach, chopped
- ½ cup cheddar cheese, shredded
- salt and pepper to taste
- Cooking spray of butter (for greasing)
Preheat oven for 350 F In a large bowl, whisk the eggs. Then, add the onions, tomatoes, spinach, and cheese. Season with a little salt and pepper, and stir the ingredients together.
Grease a muffin pan with cooking spray or a tablespoon of butter. Fill each muffin cup with equal parts of the egg mixture. Then, bake in the oven for 20-35 minutes.
Once done, test the centers of the quiches to check if they’re cooked through. Serve for breakfast or as appetizers. Enjoy!
