Lemon-thyme Chicken Thighs2017-07-05

- 2 lbs. chicken thighs, bone-in and skin-on
- 1 lemon, sliced thin
- 5 to 6 fresh thyme sprigs
- Olive oil
- Salt and pepper
Preheat oven to 400 F. Meanwhile, coat both sides of the chicken thighs with some olive oil, and pinches of salt and pepper.
Drizzle some more oil in a large ovensafe skillet over medium heat. Once the skillet is almost smoking, sear the chicken skin-side down for 10-15 minutes, or until the skin is crispy and removing itself from the pan.
Once the skin is crispy and brown, flip the chicken. Remove skillet from heat. Add lemon slices and sprigs of thyme to the skillet. Then, place the skillet in the oven and finish cooking for 15 minutes. Enjoy!
