Grilled Chicken and Peach Kebabs

  • 2 lb. boneless, skinless chicken breast, cut into chunks
  • 3 large peaches, peeled and each cut into 8 wedges
  • 2 tsps. minced garlic
  • ¼ cup chopped chives
  • 2 tsps. Dijon mustard
  • ¼ cup mayonnaise
  • 1 cup plain low-fat yogurt
  • Olive oil
  • Salt and pepper
  • Bamboo skewers


Step 1

In a bowl, whisk together the mustard, mayonnaise, yogurt, chives, garlic. Season with salt and pepper.

Step 2

Transfer chicken in another bowl. Pour over ½ of the dressing, and make sure to coat all chunks of chicken. Let it marinade in the dressing for 25-30 minutes. Meanwhile, soak bamboo skewers in water for 30 minutes.

Step 3

After marinating the chicken, assemble the kebabs by first inserting a peach, then chunks of chicken. Repeat, and insert the final wedge. Thread the remaining skewers the same way.

Step 4

Brush some olive oil on a stovetop grill. Then, grill the chicken kebabs for 8-10 minutes, flipping once, until chicken is golden brown and cooked through. Serve with the remaining dressing. Enjoy!
