Ginger Lime Pork Loin

  • 2 lb. pork loin
  • ¼ cup soy sauce
  • ¼ cup rice wine vinegar
  • 3 tbsps. vegetable oil, divided
  • 2 limes, zested and juiced
  • 1 tsp. fresh ginger, grated
  • 1 tsp. ground cumin
  • 1 tsp. chili powder


Step 1

Preheat the oven to 400°F. In a small bowl, combine the soy sauce, vinegar, 1 tablespoon oil, lime zest, lime juice, ginger, chili powder, cumin, salt, and pepper. Then, rub the soy mixture all over the pork, let it marinade in the mixture for 3 hours or overnight in the fridge.

Step 2

Once the pork has marinated, heat the remaining 2 tbsps. of oil in a large ovenproof skillet over medium-high heat. Add the pork loin, and set aside the leftover marinade. Sear all sides for 2-3 minutes until golden brown. Then, drizzle the leftover marinade over the pork.

Step 3

Transfer the pan to the oven, and roast for about 40 minutes, or until a thermometer inserted into the center of the meat reaches 145 F. Place the pork on a cutting board, and let it rest for at least 5 minutes. Then, slice into ½ thick rounds. Serve with mashed potatoes. Enjoy!
