- 1 cup graham crackers, crushed
- 2 tbsp. butter, unsalted
- ½ cup brown Sugar
- 1/3 cup white Sugar
- 3 tbsp. water
- 2 (8 oz.) pack cream cheese
- 1 tsp. vanilla Extract
- 2 cups whipped cream
- 1 tsp unflavored colorless gelatin
- 1 jar of blueberry preserves
To make the crust, combine crushed graham crackers, butter, and brown sugar with a fork. Mix until well blended. Press into a 9-inch pan, and refrigerate for 20 mins.
For the cheesecake filling, mix together the cream cheese and sugar in a bowl. Then, add the vanilla extract.
Dissolve the gelatin in water, and pour it over the cream cheese mixture. Mix and blend until the mixture has a fluffy texture. Fold the whip cream into the mixture.
Take the crust from the fridge, and pour the cream cheese mixture into the crust. Place back in the fridge and cool for about 3 hours or until the filling has set. Serve with blueberry preserves on top. Enjoy!
