- 1 cup flour
- 1 cup smooth peanut butter
- 1 cup sugar
- 1 tsp. baking soda
- 1 extra-large egg, lightly beaten
- 2 tbsps. finely chopped peanuts (optional)
- ¼ cup mini chocolate chips (optional)
Preheat the oven to 350 F, and position 2 racks in the upper and lower thirds.
Mix together the peanut butter, flour, sugar, baking soda, and egg in a bowl. Add the chopped peanuts and chocolate chips, and fold into the peanut butter mixture.
Using an ice cream scooper, scoop 24 balls out of the batter, and place on a greased or paper-lined baking trays. Bake for 15 minutes, alternating the baking trays from the upper and lower rack to evenly cook the cookies. Once cookies are lightly browned and set, remove from oven. Let cool on a wire rack. Enjoy!
