Crab and Cucumber Canapés

Ingredients

  • 1 lb. fresh lump crabmeat
  • ¼ cup mayonnaise
  • 1 celery stalk, finely diced
  • 1 tbsps. snipped fresh chives
  • 1 shallot, minced
  • Juice from half a lemon
  • 1 English cucumber, washed
  • ¼ tsp. paprika
  • Salt and pepper to taste
  • Dill or fennel flowers for garnish (optional)

Method

Step 1

In a bowl, mix together the crabmeat, mayonnaise, shallot, celery, chives, lemon juice, salt, and pepper.

Step 2

Slice the cucumber into thin slices diagonally. Scoop some crab mixture on top of each cucumber slice. Sprinkle with paprika and chopped dill. Serve as appetizers. Enjoy!
