Chicken Noodle Soup

Ingredients

  • 1 lb. skinless, boneless chicken-breast fillets, sliced into strips
  • 1 lb. egg noodles
  • 1 ½ cup chicken broth
  • 3 c. water
  • 1 tbsp. olive oil
  • 1 small onion, chopped
  • 2 stalk celery, chopped
  • 2 medium carrots, chopped into ½ inch slices pepper
  • ½ cup frozen peas

Method

Step 1

In a large pot, add the water and chicken broth. Bring to a boil. Meanwhile, in another large soup pot, drizzle some olive oil and place the pot over medium heat. Add the onion, and sauté until softened. Add the celery and carrots and sauté for 2-3 minutes.

Step 2

Add the broth mixture, and season with pepper. Cover the pot and raise the heat to high to cook the vegetables.

Step 3

Once the vegetables are almost tender, uncover the pot and add the egg noodles, peas, and chicken. Cook in high heat for another 5 minutes. Serve with bread. Enjoy!
