Broiled Apricots with Ginger Whipped Cream2017-07-19

- 8 apricots, halved and pitted
- 1 tbsp. finely grated fresh ginger
- 1/2 cup heavy cream
- 1 tbsp. granulated sugar
- 4 tsps. brown sugar
- 1 tbsp. unsalted butter
- 1/8 tsp. ground cardamom
Set broiler to high. Meanwhile, add cream and granulated sugar in a bowl. Squeeze juice from the freshly grated ginger, and add to the bowl of cream mixture. Discard pulp. Whip the cream mixture until you form soft peaks. Chill in the fridge.
Place apricots, cut side up, on a greased baking sheet. Spread the apricots evenly in the pan, and add brown sugar, butter, and cardamom on each apricot. Broil until apricots just begin to char, for 2 to 5 minutes.
Serve with a dollop of ginger whipped cream. Enjoy!
