Beef Chili

  • 2 lb. lean ground beef
  • 2 15-oz. cans dark red kidney beans, drained and rinsed
  • 1 28-oz. can diced tomatoes
  • 1 28-oz. can tomato puree
  • 2 tbsps. vegetable oil
  • 2 yellow onions, finely chopped
  • 1 red bell pepper, stemmed, seeded and finely chopped
  • ¼ cup chili powder
  • 1 tbsp. ground cumin
  • ½ tsp. cayenne pepper
  • 6 garlic cloves, minced
  • Salt and pepper


Step 1

In a large crock pot or Dutch oven placed over medium heat, drizzle oil. Add the onions, bell pepper, chili powder, cumin, cayenne, and a pinch of salt. Continue sautéing until vegetables have softened, for 7 minutes. Add the garlic and stir until fragrant.

Step 2

Add the beef, and raise the heat to medium-high. Continue stirring the beef, until crisp and browned. Add the beans, tomatoes (along with the juice), tomato puree, and another pinch of salt. Bring to a simmer, and reduce heat to low. Cover pot and simmer for 45 minutes.

Step 3

Remove the lid and continue to simmer for an additional 45 minutes. Serve with shredded cheese and sour cream on top. Enjoy!
