Banana Muffins

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 3 medium ripe bananas
  • 1 large egg
  • 1/3 cup vegetable oil
  • 1 tsp. vanilla extract


Step 1

Preheat oven to 375 F. In a large bowl, sift together all the dry ingredients. Meanwhile, mash the bananas in a separate bowl. Add the egg, oil, and vanilla extract. Mix well.

Step 2

Combine the banana mixture with the dry ingredients. Stir until well combined or when no lumps of flour can be seen. Pour the batter into a greased or paper-lined muffin tray, filling each cup half-full.

Step 3

Bake for 18-22 minutes, or until a toothpick comes clean when inserted in the center of the muffins. Let cool for 10 minutes in a cooling rack. Enjoy!
