Baked Ziti with Italian Sausage and Kale2017-07-30

- 12 oz. ziti pasta
- 1 lb. ground Italian sausage
- 4 cloves garlic, minced
- 3 large handfuls kale leaves, stems removed and roughly chopped
- 2 cups mozzarella cheese, shredded
- Olive oil
- Salt and pepper
- Shredded Parmesan cheese and crushed red pepper flakes (for topping, optional)
Preheat oven to 375 F. In a large pot of boiling water, add oil and salt. Cook the pasta as pasta until al dente, or as directed by the package. Drain, and return to pot.
Meanwhile, drizzle olive oil in a large skillet over medium heat. Sauté the sausage for 8 to 10 minutes until browned all over. Add the garlic, and stir until fragrant. Set aside.
In the pot with the pasta, add the sausage, and kale. Carefully toss until the kale is slightly wilted.
Grease a 9 x 13 inch baking dish with butter or cooking spray. Then, add half of the pasta mixture into the dish, and sprinkle with 1 cup of cheese. Add the rest of the pasta, and sprinkle with another layer of cheese.
Bake for 20-25 minutes until the cheese is melted and golden brown. Serve with parmesan cheese and red pepper flakes on top if desired. Enjoy!
