Baked Parmesan Zucchini2017-07-20

- 4 zucchini, quartered lengthwise
- ½ cup freshly grated Parmesan
- ½ tsp. dried thyme
- ½ tsp. dried oregano
- ½ tsp. dried basil
- ¼ tsp. garlic powder
- 2 tbsps. olive oil
- 2 tbsps. chopped fresh parsley leaves
- Salt and pepper
Preheat oven to 350 F. Grease a cooling rack with cooking spray, and place on top of a baking sheet. Set aside.
Mix together the parmesan, thyme, oregano, basil, garlic powder, salt and pepper in a small bowl.
Place zucchini on top of the rack, and drizzle with olive oil. Sprinkle the parmesan mixture on the zucchinis.
Bake for about 15 minutes or until tender. Then broil for 2-3 minutes, or until crisp and golden brown. Serve with a sprinkle of parsley if desired. Enjoy!
