Angel hair Pasta with Cherry Tomatoes and Basil2017-07-24

- ½ lb. angel hair pasta
- 2 tbsps. olive oil
- 5 large garlic cloves, thinly sliced
- 2 lb. cherry or grape tomatoes
- 1 cup basil, roughly chopped
- ¾ cup grated parmesan cheese
- Salt and pepper
In a large pot of boiling water, add some oil and salt. Cook the angel hair pasta as directed in the package, or until al dente. Reserve ½ cup of the pasta water. Drain well.
Meanwhile, sauté garlic in olive oil in a large skillet over medium heat. Once the garlic is fragrant, add the tomatoes, and season with salt and pepper. Cook for 2-3 minutes.
Add the pasta water, and bring mixture to a boul. Then, simmer for 5 minutes until tomatoes start to burst. Once they start bursting, add the pasta, and cook for another 2 minutes.
Remove from heal, and add the basil and parmesan cheese. Stir together. Serve with a sprinkle of parmesan cheese. Enjoy!
